Our limited-release gin, created with Kevin Vu Ha, who runs Nomu Bar in Chippendale and led the collaboration. The native Davidson plums come from an organic farm in the Byron Bay region of NSW. Kevin’s serve: pour over ice and top with tonic.

“A two year aged gin… you can smell aromas of apricot and lavender and a little vanilla.”
Rested for two years in charred American oak, Ember pours the colour of whiskey. Expect lavender and apricot on the nose and a warm, toasted-vanilla finish. We distilled 100 bottles’ worth. After two years in the barrel, evaporation took its share and 65 bottles remained.
